I think I have an example of pre-Modern memetic art: when a painter presents his version of a scene of a known story, usually Biblical or of a saint. Michelangelo, Verrocchio, and Donatello all have their own opus of boyhood David standing post-Goliath slaying. Paul Gauguin's "Spirit of the Dead Watching" is a take on Edouard Manet's "Olympia."
All referential art, like religious art, is of course mimetic. The art of today however is HYPER mimetic. Rather than relying on the context of a central religion, a handful of stories that everyone knows, it relies on knowledge of millions of stories shared on a handful of feeds that everyone uses. Both things are mimetic, but I think the latter is much more the definition of "Mimetic Art"
